What do you feel like eating when you need to satisfy your sweet tooth? Peanut Butter and chocolate are my go to’s  so I came up with these no bakes. I have 5 kids so I don’t have a lot of time to spend baking. These take about 10 minutes to make from start to finish, I don’t have to spend time baking them,  and they satisfy my sweet tooth every time. My kiddos love them for after school snacks and my 2 yr old often asks for a Koookie from the freezer! I don’t feel bad feeding her these because they are a healthy nutrient packed treat.

Low-Carb No Bake Cookies (S)

These are my go to quick cookies! I have these on hand for my family because everyone loves them. We keep them in the freezer and if we need a sweet snack, these definitely do the trick!

Ingredients
  

  • ½ c PB
  • ½ c butter
  • ½ c coconut oil
  • 2 c. oats *
  • ½ c. cocoa
  • ½ c + 3 T peanut flour
  • ¾ c. gentle sweet
  • ¾ c. water
  • 1 tsp. vanilla
  • ½ c. unsweetened coconut flakes
  • Optional: a handful of Lily’s chocolate chips ½ c. chopped nuts

Instructions
 

  • Melt peanut butter, butter, and coconut oil in a medium saucepan over medium heat
  • Add in the oats, cocoa, peanut flour, and gentle sweet
  • Add the water & vanilla and once everything is mixed, take off heat
  • Optional: add coconut flakes, chocolate chips, and pecans
  • Use a small cookie scoop or spoon and scoop batter into 2 mini muffin baking sheets
  • Put them in the freezer- once frozen transfer to a Tupperware and store in freezer for a yummy, quick and healthy snack
  • Makes 40

*I calculated the carbs in these cookies because a lot of people ask about the addition of the oats and there are only a little over 1 carb per cookie so feel free to have 1-2 at a time as an S snack or after an S meal 🙂
