Snickerdoodles are one of my favorite cookies! They are nostalgic and remind me of childhood because they are my brother’s absolute favorite. Since converting my mom to THM over 6 years ago, she has become quite the THM chef & baker. She loves re-creating our favorite dishes & desserts &Β making up new ones. She so generously shares her creations with me so I can share them with you! Mom lovingly calls these snickerdoodles “Snicks”. She prefers to use just almond flour with these for the simplicity of them but I like the texture of the almond flour, baking blend, & oat fiber. Choose your preference! The dough is really crumbly so be patient, but after they’re cooled the cookies come together really nicely & have that perfect blend of cinnamon & cream of tarter that you expect fo find in a snickerdoodle cookie π These are also really fun to make with younger kids. They love making the balls and rolling them in the cinnamon & sugar mixture & then flattening them with their little palms;) Here are my youngest two π
Snickerdoodles aka "Snicks" (THM S, low carb, keto)
Ingredients
- 2 c. almond flour OR 1 c. almond flour, 1/2 c. baking blend, 1/2 c. oat fiber (my mom uses just almond flour for simplicity but I prefer the texture of this blend)
- 3/4 c. sweetener gentle sweet is my preference
- 1/2 t. baking soda
- 2 t. cream of tarter
- 1/2 t. xantham gum
Wet:
- 1/2 c. butter
- 1 egg
Cinnamon/ "Sugar" Coating:
- 2 T. Gentle Sweet
- 1 t. cinnamon
Instructions
- Preheat the oven to 350
- Mix the dry ingredients together
- Cream together the wet ingredients
- Combine wet & dry ingredients
- Push dough together, roll into balls, & set on a plate
- Roll the balls one at a time in cinnamon/sugar mixture & set them on a greased cookie sheet (I use olive oil or coconut oil spray)
- Flatten them with the palm of your hand
- Bake for 8-10 minutes
- Let them cool completely before removing them from the pan
- Store them in an airtight container in the fridge

Very nice cookies. I also add 1Tblsp dry gelatin to all cookie recipes..makes them less cakey/ crumbly! They turned out well. I used the blend of flours.
