Have you been on the hunt for an amazing low-carb chocolate chip cookie? Well, look no further! These taste like the real thing but you can eat them and stay on plan. Growing up, my mom made the best homemade chocolate chip cookies. Now that we are both THMers she was determined to create a THM cookie that was just as good and she succeeded! I have these on hand almost weekly, and my kiddos gobble them up!
Low Carb Chocolate Chip Cookies
These are the best low-carb, THM-friendly chocolate chip cookies from the kitchen of my beautiful mother 😉
Ingredients
Dry:
- 2 c. almond flour opt: sub 1 c. baking blend
- ½ tsp. baking soda
- ½ t. gluccie or xantham gum
- 1/3 c. Lily’s chocolate chips
Wet:
- ½ c. butter softened
- 2 eggs
- 1 T. vanilla
- 1/3 c. sweetener
Instructions
- Mix the dry ingredients together (including the chocolate chips)
- Cream the wet ingredients together
- Stir the dry into the wet
- Drop by spoonfuls on cookie sheet
- Flatten with palm of hand
- Bake at 350 for 5 minutes, then turn the pan around for another 4
- Let them rest on the baking sheet a few min.
- Best eaten right after baking or from the freezer
- Makes 3 dozen
