Sometimes you’re just in the mood for some crunchy chicken. Rather than heading off to KFC, make a healthier version right at home. I use pork rinds for a low carb coating & the butter & seasonings make this dish a hit with everyone! Even my pickiest eaters at home love this meal. You can pair it with turnip fries for the perfect fast-food substitute meal. If you don’t have an air fryer, you can simply bake the chicken & it still comes out tasty. I can’t vouch for the turnip fries though, but I imagine they would still be pretty tasty as well. I love to use the no-salt seasoning from Costco as part of my chicken coating, but you can use any seasonings you prefer! Make it your own 🙂

Air-Fried Crispy Chicken (THM S, keto, low-carb)

This is an easy, tasty, & healthy version of fried chicken. It's lip-smackin' good! Pair it with some turnip fries & it becomes the perfect fast-food substitute meal 😉

Ingredients
  

Air-Fried Crispy Chicken:

  • 14-16 thawed chicken tenderloins
  • 1/2 c. melted butter
  • 2 c. crushed pork rinds
  • 1 c. parmesan cheese
  • 2 t. garlic salt
  • 3 t. no-salt seasoning I love the no-salt seasoning from Costco, but you can use any seasoning you like
  • dash pepper

Turnip Fries:

  • 3-4 turnips
  • 2 T. olive oil
  • dash salt & pepper to taste

Instructions
 

  • Turn the air fryer on by setting it to 20 minutes at 360
  • While the air fryer is heating up, make the chicken coating by crushing up the pork rinds, & adding the parmesan cheese & seasonings in a bowl
  • Melt the butter & pour it in a different bowl
  • One at a time, take the chicken tenders, coat them in the butter & then in the low carb breading
  • Immediately place in the air fryer in a single layer (I like to spray the air fryer with olive oil or coconut oil spray beforehand)
  • Repeat this process until the air fryer is at max capacity
  • At this point, the air fryer timer should be at 15 minutes. If not, reset it to 15 minutes
  • You can either cook the rest in the oven at 375 for 20 minutes or wait until the first batch of chicken is done to cook the next. The chicken is good either way 😉
  • For the turnip fries: cut the turnips in fry shapes and coat in olive oil & salt & pepper
  • Cook in air fryer for 20 minutes or until the fries have a crispy brown coating

Notes

If you don't have an air fryer you can simply bake the chicken. Preheat the oven to 375 & bake for 20 minutes 🙂
