Growing up, we often went to my Aunt Mel’s for Thanksgiving. She made the most fabulous potatoes that I looked forward to every year! Here is my THM version of them, with a few additions like bacon bits 😉

Aunt Mel's Potatoes (THM S)

Here is a perfect side for your Thanksgiving meal! My THM version of my Aunt Mel's famous cheesy potatoes is sure to hit the spot this holiday 😉

Ingredients
  

  • 2 small bags riced cauliflower or about 2.5 lbs.*
  • 1/2 c. butter
  • 2 c. chicken broth
  • 1 c. mozzarella cheese
  • 1 c. cheddar cheese
  • 2 c. sour cream
  • chives
  • bacon bits

Instructions
 

  • Preheat oven to 350
  • Steam cauliflower (microwave for 10 minutes- use a wet paper towel to cover a microwavable bowl
  • Meanwhile, heat chicken broth on medium heat, add butter & mozzarella until they melt
  • Take the broth mixture off the heat & add the sour cream until well combined
  • Once cauliflower is steamed, blend cauliflower and sauce together
  • Put the blended cauliflower & sauce in a 9 X 13 casserole dish
  • Sprinkle cheddar cheese, chives, and bacon bits on top
  • Bake for 30 minutes

Notes

*Now that potatoes are permissible on THM, feel free to use frozen hashbrowns with no added ingredients or other potatoes instead of cauliflower to create a XO.
