It’s that time of year! Fall is in the air and that means PUMPKIN everything!! After my almost 7 year old September baby was born, my mom was there to help and she made me pumpkin everything- pumpkin pancakes, bread, cookies, shakes- you name it! I’ve always loved her pumpkin cookies and I’m so excited that she made a THM version. I took the liberty of adding some white chocolate chips to take them up a notch- but either way, these are soo good!! I have to hide them from my kiddos 😉

Mom's Pumpkin Double Chip Cookies (THM S)

Pumpkin season is in full swing! And that means pumpkin chocolate chip cookies are a must!! You're whole family will love these and adding white chocolate chips takes them up a notch 🙂

Ingredients
  

  • 1 c. soft butter
  • 1 c. pumpkin
  • 2 eggs
  • 1 t. vanilla or caramel extract
  • 1/2 c. gentle sweet
  • 1 1/2 c. almond flour
  • 1 c. baking blend
  • 2 t. baking powder
  • 1/2 t. salt
  • 1 1/2 t. cinnamon
  • 3/4 tsp gluccie or xantham
  • 1 t. pumpkin pie seasoning OR 1/2 t. cloves and 1/2 t. ginger
  • 1/2 c. Lily's THM, or bake believe chocolate chips
  • 1/4 c. white bake believe chocolate chips optional

Instructions
 

  • Preheat oven to 350
  • Cream butter and sweetener
  • Add pumpkin, eggs, & extract
  • Mix almond flour, baking blend, baking powder, salt, & seasonings
  • Add dry ingredients to the wet
  • Stir in chocolate chips (save white chocolate chips to add to cookies after baking or they will disappear 😉
  • Drop cookies on a greased baking sheet
  • Press down with palm of hand
  • Bake for 5 minutes, turn the pan and bake for another 4 minutes
  • Press in 2-3 white chocolate chips per cookie right after they come out of the oven
